US recipes use volume measures (cups, tablespoons, teaspoons), while most of the world and all professional baking uses weight (grams). Converting cups to grams depends on the ingredient β flour and sugar have very different densities. Use the weight chart above or the individual converter for accurate results.
Key tip: never scoop flour directly from the bag β this compacts it and adds 20β30% extra weight. Spoon flour lightly into the cup, then level off the top. Better still, use a digital scale. 1 cup of plain flour = 125 g (spoon-and-level), not 150 g (scooped).
Note: a US tablespoon = 14.79 ml, a UK tablespoon = 15 ml, an Australian tablespoon = 20 ml. For baking, the difference is negligible. For medication dosing, always use ml.
